If I am in a hurry I use a boxed mix that I buy from the grocery store, or sometimes from the dollar store...just add a pound of polish...chicken...
sausage...or a combination of meats..etc takes about 25 minutes...taste ok too.  gotta watch the polish...sometimes a pound as we knew it is no longer 16 oz...seems there is a new standard...12 oz is a pound?  anyway last time I got some polish it was only 12 oz...which shorted my mix by 1/4 pound!

Now that the air is cooler, this recipe just makes me want to hop in my country cadillac (pick 'em up truck) and go to town for some sausage and seasonings!  Usually this calls for shrimp or a bunch of stuff I can't get.  Thanks!

Got to thinking abougt the cooking programs I use to watch on PBS TV over the years and one that stuck in my mind was Justin Wilson...who cooked in the Louisiana style...flavorful like...so I dug out my pots and pans and whipped up a mess of jambalaya....Louisiana style for supper...it was good too
I guarorntee...as Justin would say.

Louisiana Jambalaya
1/4 cup oil
1 fryer chicken, cut up (3 to 3-1/2 pounds)
1 pound pork sausage, cut into 1/4-inch slices
1 teaspoon Creole seasoning
2 teaspoons salt
2 large onions, chopped
2 celery stalks, chopped
   1/2 cup bell pepper, chopped
3 cloves garlic, chopped
1 8-ounce can tomato sauce
1 teaspoon salt
2 tablespoons chopped parsley
2 tablespoons green onion tops, chopped
4 cups cooked rice
Heat oil in a large pot over medium-high heat. Add chicken pieces; brown on all sides and cook until tender (20 to 25 minutes). Add sausage, Creole seasoning and salt. Cover, reduce heat to low, and cook until chicken is well done, about 30 minutes.
    Remove chicken and sausage and drain all except 1/3 of drippings from the pot. Add onions, celery, bell pepper and garlic; sauté until tender. Stir in tomato sauce and salt and return chicken (deboned, if preferred), and sausage to the pot. Cover and simmer about 10 minutes. Add the parsley and green onion tops, cooking another 5 minutes, covered. Fold in cooked rice and simmer another 10 minutes. Serve hot.

I did enjoy it!  I want to hear it again!  A few times I could not understand whats-her-name but in her con-dish-shun, no wonder!  I really tried to get it in color, but my radio did not cooperate.  I must have slept in the morning it was replayed.  Meant to send this sooner but have been so busy lately, not sure if washing or hanging out.  Your sound effects just keep getting perfecter (word?).  Kudos to you all!  Keep writing!

The annual super cruise in sponsored by the West Plains Car Club will
be October 18th from 5p to 8p at the Faith Assembly Church, Worley Drive (63 south by pass..near Walmart, Beside Hirsh Feed Store) this is a new location for the event from past years with a bigger parking lot and better lighting.

There will be door prizes..$25 to the largest club in atttendance, food and
all participants will receive a plaque.

Johnny Angel will be spinning the stax of wax for your entertainment, so be there or be square..its where all the cool kats and kittens will be....

Sept. 18th, Saturday, is the date for the annual car show in beautiful downtown Cabool.  The show in past years also featured motorcycles
and a variety of classes of collector cars.  Judging the event will the
the Mid American Association of Car Clubs on a 100 point system.
